Method
- 1. Slice cabbage quarters into thin strips.
- 2. Heat oil in large saucepan or stock pot, then add cabbage, carrots and celery, stirring frequently on a medium heat for 10 minutes.
- 3. Stir in stock and bring to boil. Skim off any foam that rises.
- 4. Add potatoes, cauliflower, herbs and seasoning.
- 5. Bring back to boil reduce the heat to low and place a lid on the pan.
- 6. Simmer 20-25 minutes until the veg is tender.
- 7. Serve as a chunky soup, or puree with a hand blender.
