Method
- Pre-heat the oven to 200⁰C, gas mark 6
- On a clean, cool work surface, brush a sheet of filo pastry with a little beaten egg and layer another sheet of pastry on top.
- Continue brushing and layering until all the sheets have been used, brushing the top sheet with the remaining beaten egg.
- Cut the stack of pastry lengthwise into 3 long strips, then cut each strip into 4 equal-sized squares, leaving 12 squares in total.
- Place on a non-stick baking sheet, and bake for 10 minutes until crisp and golden.
- Remove from oven and set aside to cool.
- Fold strawberries gently into the Greek yoghurt.
- On to half of the cooled pastry squares, spoon a layer of the yoghurt mixture and top with another square
- Place each stack on a serving plate and dust lightly with sifted icing sugar.
- Serve immediately.
