Method
- Wipe a large frying pan or wok with the oil, bring to a medium add the prawns and mushrooms and stir fry for 2-3 mins.
- Add the spring onions, ginger and garlic and stir for 2 mins.
- Add the stock and hoisin sauce and increase the heat - do not boil.
- Add the noodles, stir well and simmer for 3-5 minutes, then add the red pepper, pak choi and beansprouts.
- Serve immediately.
