Chicken Pizzaiola

This meal turns an ordinary chicken breast into something extraordinary with a delicious tomato-based Mediterranean sauce. Bellissimo!
- 2 x 125g skinless chicken breasts
- Spray oil
- 1 small onion (chopped)
- 1 clove garlic (crushed)
- 200 g canned tomatoes (chopped)
- 1 tsp tomato purée
- Pinch Italian Seasoning or dried oregano
- 2 button mushrooms (finely chopped)
- 1 tbsp fresh or frozen parsley (chopped )
- Salt
- Black pepper
- 1 tsp capers (optional)
- Cook chicken breasts in pan sprayed with oil approximately 20-25 minutes, or until cooked through.
- Turn half-way through cooking time.
- Spray a small saucepan with oil and cook onions gently until softened.
- Add garlic and cook 1 minute. Stir in tomatoes, tomato purée and Italian seasoning or oregano.
- Simmer gently, uncovered, 10-15 minutes, stirring now and again, until sauce has thickened and reduced.
- Stir in mushrooms and cook 1 minute.
- Stir in parsley, sweetener, salt and pepper to taste.
- Stir in capers if using.
- Serve each person with 1 cooked chicken breast topped with half the sauce.
