Method
- Pre-heat your oven to 200°C/Gas Mark 6
- 1. Boil the potatoes then, drain and mash with 25ml milk.
- 2. Steam or microwave the broccoli until just tender. Drain and leave aside.
- 3. Wipe a pan with the oil and bring to a medium heat. Add the chicken and brown off.
- 4. Transfer the chicken and broccoli to an ovenproof dish.
- 5. In a saucepan, add the cornflour and slowly add the milk. whisking as you go.
- 6. Crush or dissolve the stock cube in a little hot water, then add to the pan and bring to the boil, stirring continuously until the sauce thickens.
- 7. Remove from the heat and pour the sauce into the dish over the chicken and broccoli.
- 9. Spread your mashed potatoes over the chicken and broccoli mixture and place in the oven for 15 minutes.
- 10. For crunchy topped potatoes, finish under a moderate to hot grill.
- 11. Serve with carrots for colour.
