Banana Power Pancakes

Banana pancakes

Method

  • 1. In a blender, blitz together 2 of the bananas, the eggs, oats, baking powder and salt to a smooth, creamy mix.
  • 2. Wipe a frying pan or hot plate with rice bran oil and bring to a medium heat; add two separate ladles of batter into the pan, making two round pancakes
  • 3. Cook until golden brown and bubbles start to appear on the surface then flip them over. Cook on the other side until golden.
  • Repeat until all the mixture is used.
  • 4. Serve the pancakes with the remaining banana, sliced, and drizzle with a little honey.
  • As an option, spinrkle with crushed walnuts, toasted pine nuts or seeds.
